Spelt Bread
I've posted this before, but French Meadow's Bakery makes a spelt bread with nothing but spelt flour, no added ingredients. This is the only flour or bread product I've been able to tolerate and it makes this diet bearable if you can handle about 15 grams of spelt carbs.
You can toast this bread with coconut oil and add cinnamon or nutmeg or both and have an "almost normal snack".

Penny, you are funny! I'm also going to try toasting a piece of spelt bread in my mothers belgium waffle iron and see what happens. I'll let you know!!
You should make waffles using spelt flour. Then you can top them with cinnamon, a little plain yogurt, and some non-alcoholic maple or vanilla extract.
Penny, I used to do that, but I found I couldn't control the amount I ate. I ended up having way too many carbs when I bought spelt flour. Me and my appetite. p.s. have you been able to find maple flavoring without alcohol?
There are several glycerine based extracts available at most health food stores. I have seen them many times in the past.If you make your bread treat even tastier, it may mess you up. I guess it might be better to leave well enough alone. :)

Hi Sheryl, yes, I am pretty sure that it fed the yeast. I can't say for sure because at the time I was eating a couple of other items that may have caused a breakout, but I'm afraid to chance it again. I really think that anything that is sweet is too good to be true. Even after talking to the "xylitol guru" on the telephone, I wasn't convinced that it was o.k.
I had a migraine the day I ate some. Could have nothing to do with it, but I'm not going to risk it again. It had a strange "cold" taste to it anyway. I made cinnamon toast with it. Maybe its better in baking or something. I'm glad I tasted it so I wouldn't keep thinking I was missing something great.
