Hi,

Since most of us (me included) avoid all grains, I hesitated posting this. However, I thought it might help someone who's mainly avoiding gluten and common allergens. I still check out labels in the hopes of finding something new. I found a brand called Namaste (pronounced Naa-Maa-Stay) that is Free of Gluten, Wheat, Potato, Soy, Corn Dairy,Casein. They make a pancake mix that contains sweet rice flour, tapioca flour, arrowroot flour, rice milk powder, cream of tartar, baking soda, salt and vanilla. I've tried making a pancake mix from buckwheat, amaranth, etc. but it doesn't turn out. I made this for some members of my family and they said it tasted as good as wheat pancakes they used to have. That tells me alot! This company also makes a pizza crust mix like this--no gluten, common allergens or yeast. I plan to check with the company to see if they offer any other specialty items. Who knows, maybe they offer some grain-free items.

I make wicked pancakes with an egg, rice milk and buckwheat flour!

My boyfriend absolutely loves them too!

They taste the same as I remember pancakes and he reckons they do too!

The recipe is from Erica White's cookbook. She is a UK dietician who has had and specialises in Candida diet/recipes.
I'm at work but off the top of my head I think it is...
125grams Buckwheat flour
300ml Rice Milk
1 Organic Egg
4 tables spoons of water.

We use a tiny bit of organic butter or olive oil in the pan so they don't stick but that is all.

They are very yummy! I have then with lemon juice and Stevia or Xylitol. My boyfriend has his with chocolate sauce now!! :( Hehe!

Thanks for the recipe. I'll try it. I've got all the ingredients on hand. The chocolate sauce sounds yummy. I used to do half and half mixture of buckwheat and powdered cocoa. I forget if I used stevia or xylitol to sweeten the bitter cocoa.

I've never heard of lemon juice on pancakes. Is it good?

I make lemonade with lemon juice and stevia. Yum!

No worries! Good luck with it - thinking about it though it depends what pancakes you are used to?! We have European style crepe type pancakes which is all I know really but that's probably not what you have?!
Lemon and sugar is a very traditional european topping for pancakes\crepes, again, all I am used to! My boyfriend got bored of it though and changed to chocolate sauce which I can't have! I prefer lemon and stevia/xylitol anyway though! :)

The recipe was correct although I have put it in cup measurements below:

1 scant cup buckwheat flour
1 organic egg

1 1/3 cups rice milk
4 tablespoons water

Now I see, crepe style...lemon sugar would be perfect. Sometimes when I make crepes, I use orange/stevia.

The pancakes I referred to are thicker and about 3-4" in diameter. Traditionally, we stack them up and pour maple syrup over them. (Yummy, but not allowed on the candida diet.)

The buckwheat crepes sound like a wonderful replacement. BTW, thanks for the conversion :-)
