Front page of our major newspaper was a big story about Saukerkraut health benefits and a possible cure for Avian flu. It was tied to the Kimchee/Avian flue news article. Further down in the story the article noted that people groups (Polish and others) who consumed 4 or more servings per week as an adolescent of sauerkraut vs. less than 1.5 servings per week as an adolescent had a 74% reduction of breast cancer. The article touted lactic acid as the beneficial health properties.
I'm hoping more companies will start producing fermented foods again or lactic acid would be added to more foods. Some of us have had such a hard time finding fermented veggies. Maybe they will make a come back and become popular once again.
I started eating raw UNPASTEURIZED sauerkraut and am having candida die-off and am feeling like I totally wasted money on probiotics, this stuffis powerful!

Pace, the whole thing about fermented foods is that they do not lend themselves to industrialisation and mass production. Thats why they are an almost extinct food.
What we eat is far too important to be left to profit seeking companies to decide on the ingredient list.

You're right. Guess it was hopeful thinking. However, cultured veggies have been disappearing from my local health food stores to the point where when I inquire about them, no one has a clue as to what I'm talking about. I can't even get them to special order it in. I expect that at the grocery store chains, but not at a health food store or gourmet foods shop. I really do hope there will be a resurgence in them.
Time to get out my canning jars and start culturing those veggies..
Hi Pace, I've been eating Kimchee everyday especially after reading what you posted about avian flu. Also after reading Simon's post just below, I may double up on my cultured vegetables and see what happens, if I can afford to. Are you still having trouble finding cultured vegetables? Where do you live again?

I'm eating more cultured veggies, too. I noticed other are too. You should have seen the sauerkraut shelves at the store. There was quite the dent in the row of sauerkraut. One store which normally sells 7 cans per week had sold 30 and the week wasn't even done.
One health food store just started carrying Rejuvenative brand raw sauerkraut. It's pretty good. I could order the Deep Root ones from Salt and Grain society, but it's a little expensive. Maybe I need to look at it as an investment in my health.
I may try to culture my own again. I've got some culture from Body Ecology.
Hey Pace, unfortunately it's a catch 22 when something becomes popular, the price usually goes up. I am so mad at my health food store, and myself when I mentioned that they had the best price on coconut oil. Of course the next day the price went up. This has happened to me before. No kidding, when I buy a product out, they raise the price.
I just got off the phone with my mother and she said to me "don't you remember when I used to make my own saurkraut"? So, maybe dear 'ol mom can help me out this winter.

That's happened to me before, too. :-0 I thought about that with the sauerkraut. It's bound to go up in price.
That old law of supply and demand kicks.... Guess we'll have to be stealth buyers or make our own.
That's great news about your mom. Tell her you'll take a case for Christmas. :-) Who knows, maybe the rest of us will start ordering from her, too. (I'm still trying to get the hang of making my own sauerkraut).

Thats how I look at all my expensive stuff. I don't have insurance so the money it would cost to pay for that, I apply to all my expensive stuff.
I found deep roots in a small healthfood store about a 1/2 an hour away. I was so happy! I can't believe Whole Foods stopped selling it.
I'm eating tons of real pickles too. I hope its not too much sodium. Thats something I never really keep track of...
Hi Sheryl, that's my philosphy also, about the cost of stuff. I'm glad you found the Deep Root, they are really good, but a little expensive. I eat about $35-$40 a week worth of cultured vegetables. How about you? What do you eat and how much a day? p.s. the only negative side I see from eating too much is a little gas.
http://www.wildfermentation.com/index.htm I tried making Kimchi a while back - but I don't think I was too successful. I think it ended up being more pickled than fermented. Maybe I'll try again soon - afterall there are not many foods cheaper than cabbage. I remember I didn't use any established technique. I just sorta threw a bunch of things in a big mason jar and hoped for success. Next time I'll be a little more careful. (...though maybe I'll just go to one of the several Russian/East European stores in town and buy it.)
