Cabbage Rejuvelac
Hey Tom, hope you are doing well. I remember you used to make cabbage rejuvelac, and have a few questions. I am looking for good fermented foods, and rejuvelac seems like a no-brainer. I have the basic recipe from the net, but am curious... can you add sea salt, or any spices like cinnamon? also, did you eat the cabbage or just throw it out?THanks much,
John, I just put the shredded cabbage in the blender with distilled water and blended well (you don't need salt unless you are making sauerkraut). I then poured this into a glass jar with a tight seal and placed in a closet for three days, I then squeezed it through a strainer and refrigerated, (I composted the pulp but don't see any reason why you couldn't eat it if you wanted to), you need to use the rejuvelac pretty quick or it will turn to Lactic Acid. I don't know about adding spices to it, don't think I would do it, might affect the bacteria. I have some Kefir started ordered from Lifeway Foods, it contains 10 strains of bacteria, you might want to check this out.

I did kefir for awhile. got my grains from "Marilyn the Kefir lady" who frequents the curezone kefir forum. nice lady. In the end, i had to quit, dairy just didn't agree with me. So I am looking for non-dairy probiotic foods for overall health.

John, I don't like the idea of all that milk either, I'll probably try making it with soy and see how that works. Did you try the Chia seed? This is a real superfood in my opinion, goes with anything.
Not yet Tom. Too overwhelmed with work and my son's treatement to do much... but I will.
one other thing you can check out is the young green coconut kefir... use "water Kefir grains"... I did it for awhile, but stopped when I stopped the dairy because I wasn't sure which was bothering me. Now I know it was the dairy.
